抓炒鱼片原料:生鱼片四两,白糖二钱,湿团粉二两,酱油三钱,料酒二钱,醋一钱,味精、葱、姜末各少许,猪油八钱,花生油(取一斤作炸料用,约耗八钱)。制作方法:1.将鱼(最好用鳜鱼)去净皮骨,切成长一寸、宽八分、厚一分五厘的鱼片,用湿团粉一两七钱一起拌匀。2.将花生油在锅中热到冒烟时,再将鱼片一片片地放入。等鱼片呈焦黄色时,取出。3.先将酱油、醋、白糖、料酒、味精及湿团粉三钱在碗中调匀,再将猪油在旺火上...
